Cut up chicken. Cut each breast into 5 to 6 small pieces and lightly spray with olive oil
Combine ingredients. Let marinate in fridge for at least 1 hour, or over night
Cook in oven. Preheat oven to 400 degrees F. Spray the baking sheet lightly with spray olive oil. Place the chicken pieces on the sheet, evenly spaced.
Let is roast for about 15 minutes until cooked through, turning the chicken pieces once with tongs halfway through cooking.
Slice the meat into small, thin shawarma-like pieces.
