Same Recipe can be made with ground turkey.
- 1lb extra lean ground beef (95%)
- 2 large sweet potatoes
- S&P
- God Body Sugar free BBQ sauce
- low fat parmesan cheese
Preheat oven to 400.
Heat a large nonstick skillet over medium-high heat. Stir in the ground beef, and cook until brown and crumbly. Pour off and rinse off excess grease under hot water in a cullender in the sink. Peel and boil sweet potatoes, season with S&P and use hand mixer to whip.
Measure 2 portions of beef and place in a bowl & mix in desired amount of BBQ sauce (I use approx. 2tbsp for every 3oz of beef). In a casserole dish spread beef mixture across the bottom (ideally you want the beef mixture to be 1 to 2″ thick). Weigh out 2 portions of sweet potato and spread across the top of the beef mixture. Sprinkle 1tbsp of low fat parmesan on top.
Bake for 20 minutes. Broil on high for 2 minutes to brown topping. Cut in half & serve.
