This recipe can also be done with ground turkey, and any other vegetable item you would like to stuff (tomato, zucchini, etc)
Original recipe makes 6 stuffed peppers Change Servings
- 2lbs ground beef
- 6 red bell peppers
- low fat parmesan
- 1 head of garlic
- 1 med white onion
- 1 packet of taco seasoning
- marinara sauce
Preheat oven to 350 degrees F (175 degrees C). Heat a large nonstick skillet over medium-high heat. Stir in the ground beef, and cook until brown and crumbly. Pour off and rinse off excess grease under hot water in a cullender in the sink, then stir in garlic, onion and taco seasoning. Weigh your protein and place in a separate bowl. Add desired amount of marinara sauce (I use 2tbsp).
Cut the tops off of the peppers, and remove the veins and seeds. Fill each pepper with the ground beef mixture. Place into the cups of a muffin tin, and add 1 tbsp low fat parmesan to top. Bake in preheated oven 30 minutes or until peppers are soft.
